Peanut Butter Chocolate Energy Bites
Need a quick boost of energy during your workday? These delicious energy bites are packed full of protein, and are easily made with ingredients you have in your kitchen!
Prep time: 5 minutes
Servings: 8 (3 bites each)
– 1 cup rolled oats
– 1/2 cup ground flaxseed
– 1/2 cup nut butter of choice
– 1/3 cup maple syrup
– 1/2 cup mini chocolate chips or raw cacao nibs
1. In a large mixing bowl, combine rolled oats, flaxeed, nut butter, syrup, and chocolate chips; mix well using a spoon or mixer.
2. Using your hands, roll the mixture into balls, approx. 1-inch each. Place balls on cookie sheet and chill in the refrigerator until firm.
3. Enjoy!
NOTE: The balls can be stored in an airtight container in the refrigerator for up to 1 week.
