Southwest Chicken Mac’n’Cheese

- 2 small to medium sized boneless skinless chicken breasts, cut into bite sized pieces
- 1 small onion chopped
- 1/2 of a bell pepper
- 2 large garlic cloves minced
- 1-2 tbsps. olive oil
- 8 oz elbow macaroni or you can use shell pasta
- 1 cup milk
- 1 cup chicken broth
- 1/2 cup salsa
- 1 4 oz can green chilies
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. dried oregano
- salt and pepper to taste
- 2 cups shredded cheddar cheese
- 4 oz cream cheese softened and cut into small chunks
- Toppings of choice
Directions
In a large 12” skillet brown the chicken, onion, bell pepper and garlic in olive oil for about 5 minutes or until chicken is no longer pink.
Add in the pasta, milk, broth, salsa, green chilies, chili powder, cumin, oregano, salt and pepper.
Cover and simmer for 10-12 minutes or until pasta is tender.
Remove from heat and stir in the cheeses until melted. Top with desired toppings.
