To end the night, we’re enjoying a dish native to the tropical coast of Northern Honduras: Conservas de Coco

4 lbs. of coconut pulp

2 lbs. of brown sugar in pieces

2 cups of water

Lemon zest (optional)


Directions

Remove the water inside the coconuts, then heat them evenly on the stove so that the pulp comes off the shell.

Then split them and remove the pulp from the hard shell, remove the dark part of the coconut and proceed to grate it.

Then place it in a pot and add the brown sugar, lemon zest and water.

Bring to a boil over medium heat, stirring constantly with a wooden spoon.

When the mixture starts to dry, remove from the heat. Take small portions and spread them on baking paper, giving them a round and flat shape.

Do this step until you no longer have any mixture left.

Let cool, serve and enjoy.
