Balbuljata (Maltese Egg & Tomatoes)

Next up on our culinary world tour, we’re visiting the gorgeous country of Malta. A small island country located in the Mediterranean sea, Malta boasts tropical beaches, beautiful Old-World architecture, and an intensely nutritious and delicious cuisine. We’re going to start off our day with a Maltese breakfast classic: Balbuljata.

2 large Eggs

Salt & Pepper to taste

2 tsp Oil

1 small onion, finely chopped

1 medium tomato, finely chopped

1 tbsp parsley, finely chopped


Directions

In a small bowl, whisk eggs with salt & pepper.

Heat oil in a nonstick pan; add the onions and saute until translucent and starting to turn light brown.

Add the chopped tomatoes and cook for 1~2 minutes or until just tender and the mixture thickens a bit.

Add the whisked eggs and cook on medium heat, stirring constantly.

Cook till the eggs are cooked and set but still moist, about 2~3 minutes.

Sprinkle with chopped parsley and serve immediately along with some crusty bread.
